This Fresh and Crunchy Broccoli Salad is packed with vitamins and it will be a perfect addiction to your lunch or dinner.
Recently, I have been into healthy eating. I look for ways to cut down refined sugar, refined flour and gluten from the diet and incorporate more of vegetables, fruits, whole grains, nuts and protein rich food. For lunch, I love eating salads. The more fresh and raw vegetables you use in your salad the more nutritious it will be. Also its important to not eat a lot of fatty dressings in the name of eating salads. You need to choose your salad dressing wisely. This Broccoli, Apple and Walnut Salad is healthy not only because of all these nutritious fruits and nuts but also because of a simple and high protein greek yogurt dressing. Some yogurt, salt and pepper and thats it. No added oil, sugar or mayo added to it. It still makes the salad creamy and tastes amazing. I really believe this Fresh and Crunchy Broccoli Salad is one of the tastiest ways to eat this super vegetable.
All the ingredients work well together. I use a yogurt dressing in this recipe and it adds an extra touch of creamy texture, but doesn’t overpower the flavours of the main ingredients.
- For the salad:
- 1 cup chopped broccoli florets
- 1 medium apple, cored and finely chopped
- 1 cup grated carrot
- 1 cup corn
- 1 cup toasted walnuts
- For the dressing:
- ½ cup Greek Yogurt
- 1½ tbsp fresh lemon juice
- ¼ tsp black pepper
- ⅛ tsp salt
- ¼th cup water
- In a small bowl, mix all the dressing ingredients together.
- Place the salad ingredients in a large mixing bowl and add as much dressing as you want (I use all of it).
- Mix the salad well and serve immediately.
