Its really good to keep your self hydrated during summers. Besides water, one can have lots of fruits and vegetables to keep fresh and avoid dehydration. Today’s recipe is a simple and easy Sprouted Moong Salad. I personally love moong. Its rich in nutrition value and tastes amazing. I have it almost every alternate day during summers. Mostly have it warm, but this time I wanted to make it in a salad form. The mix of flavors in this salad it what makes it stands out. The sweet pomegranate, the crunchy cucumbers, juicy tomatoes and that delicious orange dressing, together create magic.
You can definitely preserve the Orange and Lime dressing in a glass jar for up to a week. Even the salad is good for 2 days if you are one of those meal packers. I like to make it fresh and trust me, I finish it in 5 mins. Its that delicious. The dressing too is simple and healthy. This salad jar is a jar full of health and goodness. Nothing fancy or artificial, it perfect for all you weight watchers out there.
Lets get started with the recipe now.
- FORTHE SALAD:
- ¼th cup diced tomatoes
- ¼th cup diced cucumbers
- ½ cup sprouted moong
- ¼th cup pomegranate
- Few mint leaves
- FOR THE DRESSING
- ¼th cup orange juice
- 1½ tbsp lime juice
- Salt to taste
- Pepper to taste
- Chaat Masala (optional)
- Pinch of Sugar
- Finely chopped green chilly
- Finely chopped parsley
- Mix all the ingredients under the dressing header, and keep aside.
- In a jar, add the dressing first. Then top it with cucumbers, tomatoes, sprouted moong and finally pomegranate. You can follow any order. Top it with some mint leaves and lemon wedges.
- Your easy and healthy salad is ready.
