Love Watermelons?? Try this watermelon salad as its perfect for your summer brunch. Its tangy, fresh and delicious!
Summers are here and its extremely hot outside. You no longer want to eat heavy meals for lunch as it makes you lazy and sleepy all day. I personally like to incorporate a lot of fruits into my daily eating plan during summers as its light on the tummy and keeps me hydrated all day long. Summer seasonal fruits include watermelons, melons, cantaloupes, mangoes, pineapples, papayas etc and all of them are my absolute favourite.
This watermelon, cucumber and mint salad is just perfect for a hot summer day to beat the heat. Its light, filling, delicious and super easy to put together. The versatility of this recipe makes it even more enjoyful. You can add or skip some ingredients and make a new version each time. Traditionally, a watermelon salad usually incorporates not more than four to five ingredients including cucumbers, mint, feta and lime juice. If you haven’t tried it yet, you should definitely make it….Its Delicious!!
I wanted to make a different version all together. I tried to incorporate thai flavours to this salad. To my surprise, peanuts were the best addition to the salad. They add extra crunch to it and tastes absolutely amazing with watermelons. Lime Jucie, Orange Juice and a dash of thai soy sauce give it the zing.
Lets get started with the recipe now.
- 2 cups watermelons(De-seed it, and cut it into 1-inch squares)
- ½ cup cucumber
- ¼the cup mint leaves
- ¼ cup roasted peanuts coarsed
- 2 tbsp lime juice
- 2 tbsp orange juice
- Dash of soy sauce
- ½ tsp chilli sauce
- 1 tsp grated ginger
- Salt and Pepper to taste
- In a large bowl, add lime juice, orange juice, salt, pepper, soy sauce, chilli sauce, ginger. Whisk it until incorporated.
- Add in the watermelons and cucumber to it. Top it with some mint leaves and peanuts and the salad is ready.
