Now festivals to me, apart from a reason to celebrate and enjoy with friends & family also means lots of good food. I think most of you can relate to this, as every festival has its own speciality and an array of good food, including sweets and savory items are made.
Thandai or Flavored Milk is one of the most famous drinks which is made during HOLI. Two of my most favourite recipes that are mandatory in my house every HOLI are Thandai and Gujia. You need to check out the recipes if you are planning to make them this year. Just go to the blog archives and look for them. I am also going to link it down below towards the end of the post.
I wanted to try something really fun, so here is this most amazing Thandai Rice Pudding. When your two favourite recipes are combined into one there is nothing more you can ask for. The recipe is extremely simple and perfect for your HOLI Party. Make small single servings for your friends & family. The best part is that you can make it today itself and it is good to go for atleast 2 days in the refrigerator.
Also the ingredients required for the recipe are really simple and would be available in your kitchen. If you are looking for a detailed method on how to make a thandai masala then do read my post on Thandai. You can also buy readymade thandai powder from any store near you and use it in the pudding. The rice pudding is a little thick in comparison to the regular kheer. I have spiced it with cardamom powder, black pepper corns and loads of nuts. Top it with dried rose petals and you are good to go.
Lets get started with the recipe now.
- 750 ml full fat milk.
- ½ cup rice
- 50 gms sugar
- 50 gms condensed milk
- ½ tsp cardamom powder
- 3 to 4 tbsp thandai powder( if you want to see how to make thandai then see the link at the end)
- ¼th cup Pistachio Flakes
- ¼th cup Almond Flakes
- ¼th cup Dried Rose Petals
- In a non-stick pan, heat the milk and start boiling. Once the milk is boiled and reduced to ¾th, add the soaked rice.
- Keep stirring until the rice is cooked and milk is reduced to 50 percent. Now add condensed milk and sugar. You can adjust the sugar as per your taste.
- Once everything is incorporated top it with some almonds, pistachio flakes and rose petals. Serve Chilled.
